The Release Preview and Beta branches let you opt out, once you do that, you will then go back to the stable branch once that catches up. Regarding backing out, there are three branches of the Insider Program. The updates do not affect your data and settings, everything gets transferred over. A fast machine with a high speed SSD and not a lot of data will install feature updates quickly, a slower machine with a HDD and a ton of data will need hours.
Update times really vary from computer to computer, it can be minutes or hours. Wait until things start officially happening which should be in another week. The copy floating around is not official, and it is possible it has security issues or malware built into it. First, I do not recommend installing Windows 11 at this time.
